Moist & Easy Blueberry Muffins with Brown Sugar Topping


There is nothing better than a warm moist blueberry muffins for breakfast or for that matter any time. This is my favorite blueberry muffin recipe which you will find extremely easy and quick to make and incredibly delightful.

Muffin Ingredients:

2 cups white flour
3 teaspoons baking powder
1/2 teaspoon salt
1/2 cup sugar
1 egg, slightly beaten
1 cup milk
1/4 cup melted butter

Brown sugar topping

1//4 brown sugar
1 tablespoon flour
1 tablespoon melted butter
Cut with pastry blender or fork until mixed
Sprinkle on top of muffins prior to baking.

Directions

Preheat oven to 375 F.
Butter muffin pans or use cake holders.
Reserve 1/4 cup of the flour.
Mix the flour, baking powder, salt and sugar in a large bowl. Add the egg, milk and butter stirring only enough to dampen the flour. The batter should not be smooth.
Sprinkle reserved flour over rinsed and drained blueberries.
Stir blueberries into batter.
Gently spoon into the muffin pans filling each cup
two-thirds full. \
Add brown sugar topping to each muffin and gently press into batter.
Bake for 20 minutes.
